Chibuike Udenigwe is a Ph.D. candidate in Food and Nutritional Sciences at the University of Manitoba. His research project, under the supervision of Dr. Rotimi Aluko, involves enzymatic hydrolysis of flaxseed proteins to produce peptides with specific structural and multifunctional bioactive properties. He also investigates the structure-function properties of food-derived peptides and their potential therapeutic properties against hypertension (ACE and renin inhibition), inflammatory and cardiovascular diseases. His research interest also includes phytochemistry, food toxicology, food phytoalexins, and molecular aspects of enzyme inhibition by food-derived peptides. Chibuike obtained a Bachelor of Science degree in Biochemistry and a Master of Science degree in Chemistry. He has received several scholarships and awards for his graduate research work. Chibuike is a member of AFMNet Highly Qualified Personnel Association (HQPA) and served as Chair of HQPA Governing Council (2009-2010).
